The first one-sided surface was discovered by A. F. Möbius (1790-1868) and bears his name: Möbius strip. Sometimes it's alternatively called a Möbius band. (In truth, the surface was described independently and earlier by two months by another German mathematician J. B. Listing.) The strip was immortalized by M. C. Escher (1898-1972).
Cat Bordhi wrote 2 books (out of print now) and an ebook on the use of Moebius. Knitting a Moebius is really just a very fun knitting parlour trick. The cast on is over a double loop of a circular needle. In the first picture above where the string is coming from is actually the cast on. I ONLY knit right side rows but it obviously is 1/2 right side and 1/2 wrong side. How you ask? That is the mystery of the Moebius.
